As you know you are allowed hundred grams of rhubarb once you get into the cruise phase.
Well here is one way to use that rhubarb allowance:
Do you like juice with bits? If you do, here's a treat.
You need
500 g of chopped rhubarb (frozen from Farm Foods, sold in 1 kg bags)
2.5 L of water
five heaped tablespoonfuls of Splenda.
Method
1.put the rhubarb into a large pot
2.pour in the water
3.bring to the boil.
4.Remove from heat.
5.when slightly cooler, use a whisk like is swizzle stick to break up any large pieces of rhubarb
6.finally sweeten with splenda to taste
It yields 600 ml for five servings. Serve hot or cold. Do not exceed 125 mL per day for your daily limits of 100 g of rhubarb daily.
Feel free to experiment with adding a dash of lemon or if few drops of other compatible flavouring is for example strawberry essence.
